AZIENDA MONTE ZOVO: THE DREAM OF CARLO COTTINI

The family-owned Monte Zovo is located in Caprino Veronese , a small municipality in the Italian province of Verona. The winery dates back to 1908 and was founded by grandfather Carlo Cottini . The name 'Zovo,' refers to a hill. The vineyard property covers 73 hectares. The properties are divided between two estates . One is located in the area of ​​origin of Bardolino. The wines from this estate are marketed under the name, 'Ca Linverno' . The vineyards are located on a 300-metre-high hill , situated between Lake Garda and at the foot of the hills of Monte Baldo. The second winery, Palazzo Maffei, is located in the Valpolicella region. The vineyards here are located at an altitude of 400 metres and overlook the castle of Illasi and the Mezzane valley. The production consists of: Amarone, Valpolicella Superiore and Ripasso . The quality of the grapes is so good that until the year 2000 companies such as Masi, Tomasi and Allegrini were also among the clientele.

AMBITIOUS GRANDSON

Monte Zovo has now grown into an independently operating company with the ambitious grandson of the founder, Diego Cottini, at the helm. No step in the production process escapes him. A lot of investment has been made in the wine cellar that was constructed in 2004. More than 80% of the cellar is located underground. Diego did not want to damage the natural environment. The cellar is located in a vertical position, equal to the hill on which the building is located. By using the natural force of gravity, machines for pumping the juice are unnecessary. Many things have a natural process, which saves a lot of energy.

WINTER WINES

The Ca'Linverno wines come from vineyards with a hilly location . The soil consists of a combination of rock/lime/gravel. The terroir has several advantages. The higher location ensures more variation between day and night temperatures, which allows for a good build-up of acids and aromas. The natural slope catches the sunlight better. The grapes can therefore ripen completely . The wines that come from here have a striking amount of structure and are very aromatic in character. Ca L'Inverno refers to the harvest period; inverno means winter: The grapes that remain hanging until the first signs of winter appear have been selected in advance. The longer hanging time ensures overripe and here and there somewhat dried out grapes. After manual harvesting, the grapes are stored in a well-ventilated space for 20-25 days, where they dry further. The dried grapes contain extra sugar, which after fermentation produces a rich, opulent wine with a rare softness and a characteristic aroma of amarena cherries and dried fruit.

AMARONE FROM THE VALPOLICELLA

Amarone is composed of: Veronese Corvina, Rondinella and Molinara grapes . After picking, the grapes are left to rest for four months. The fully dried grapes then ferment completely, resulting in a velvety, ruby-red wine with a warm and generous taste palette of: almonds, ripe plums, violets and dried cherries combined with a fascinating hint of raisins and raspberries .
