In 1973, Alain Maurel founded his company in the Cabardés region of origin. He did not rush into selecting vineyards. Together with his father, he first conducted extensive research into various external factors, including the influence of climate and soil on a vineyard, and he visited several top vineyards in the area. He then took the initiative, as one of the first winegrowers in the region, to reorganise the vineyards he had purchased. His initiative to improve quality earned him the support of the local Ministry of Agriculture in Aude. In addition to reorganising his vineyards, he also implemented important quality improvements in the wine cellar and classified the wines by wine series. In 2009, S téphanie and her husband Olivier Ramé took over the family business. After years of close collaboration with the family, which was necessary to pass on the experience of winemaking, they made their first wines in 2013. Together they invested in the vineyards , in a brand new cellar building and in a new bottling line. Everything was done to monitor the quality from the vineyard to the bottle. 'Les Plos' is one of the new wines; the second largest in the Cabardès (120 hectares), a wine region 10 kilometers from Carcassonne . 'Plos' is known for its pure, concentrated and elegant wines.
The vineyards for the Cabardès appellation are located at the foot of the Massif Central , in the part called “ The Black Mountain ”, 10 kilometres from Carcassonne, near Lastours. Côtes de Lastours is located in the Aude department, on the southern slopes of The Black Mountain. The soil consists mainly of limestone and clay and has a high magnesium content. Cabardès enjoys a climate that is somewhere between the Mediterranean and the Atlantic . The wind usually comes from the East or West, the Pyrenees shield the South winds. The soil consists of limestone, very important because it acts as a sponge for the roots of the vine. The viticulture is sustainable and, like a number of other wineries we work with, is associated with the Terra Vitis label .
The Cabardès wine region is the only appellation that allows the use of Mediterranean grape varieties (Syrah, Grenache, Cinsaut, Mourvèdre) in combination with Bordeaux grape varieties. These may be used in equal parts of at least 40% per category (Merlot, Cabernet Sauvignon, Cabernet Franc).
The wines of Les Plos are very attractive in terms of price-quality ; for that reason we at Dare Wines have included the entire line, from tight Chenin Blanc to ripe Chardonnay, from sultry Merlot to spicy Syrah, in our Sommelier Selection.
