DOMAINE PABIOT; PURE 'FUMÉ' FROM POUILLY.

The vineyards of Domaine Pabiot are located on the slopes of the right bank along the upper Loire, in the hills of Les Loges, near Sancerre. The vineyards border the village of Pouilly (sur Loire). Jonathan Pabiot (24 years old) is the son of Didier Pabier, the 'great' winegrower from Poully Fumé. Jonathan is the 4th generation of winemakers in the family. The ancestral know-how of the winemakers family, modern refined techniques and precision are used to continue the quality of Pouilly-Fumé as it has always been.

LOW YIELD, HIGH QUALITY

Domaine Pabiot produces 12,000 bottles per year. Due to the low yield of the grapes, it is impossible to produce more. In addition, Pabiot pays a lot of attention and precision to the grapes, so that producing more only comes at the expense of quality. As can be seen in the photos, the grapes are carefully picked by hand, after which the grapes are brought to the press fairly quickly. Here they undergo a first selection. Pabio believes in the power of natural yeasts in the grapes; in his opinion, fermentation does not have to be stimulated. After fermentation, all fermented grape juice is stored during the winter ; by mixing different batches, different soil qualities are brought together. After light filtration, the wines are bottled in the spring and are given the necessary rest for a period of about 2 months. The bouquet in the wine develops into a beautiful interplay of fruit tones and beautiful acids. After about 2 months, the wines are 'ready' for sale.

The Pouilly-Fumé 'Les Vieilles Terres', is developed on, as the name suggests, ripe soils with developed fertility ('of the old land'); this makes it very suitable for the maturation of the Sauvignon Blanc grapes, of which this wine is made for 100%. This high-quality cuvée has a light yellow colour with a green tinge, an expressive nose of flowers and soft finesse . It is a beautifully balanced wine with a pleasant liveliness.
